Distillation of whisky as an alcoholic beverage has a long and contested history. While the practice of distillation moved to Ireland and Scotland no later than the late 15th century the origin of the spirit is a hotly contested subject. The first licence for distillation places the birthplace of commercial whisky distillation in Northern Ireland but a shipping ledger positions the first record of whisky production in Scotland.
While the Scottish whisky market has blossomed in Australia and grown dramatically in popularity, in modern times Irish whisky has become more obscure. Every week in November Starward Distillery will be tipping their hats to some of their lesser known Irish counterparts in a celebration of Irish whisky.
