Meet The Makers: Cool Delights on Bay

What makes a professional masseuse become a gelato shop owner? We spoke to Sheila Matino of Cool Delights on Bay to find out.

After holidaying in Europe and seeing the range and availability of Italian gelato, Sheila Matino realised that in her home town of Sandringham in Melbourne’s south, there was none in sight. She had a lightbulb moment and searched around for a professional gelato maker who would join her on her quest to open an authentic Italian gelato shop in her sunny Bayside suburb. Today, this dream is a reality for Sheila Matino, Owner and Manager of Cool Delights on Bay.

We would love to know what you were doing before opening Cool Delights on Bay

Before opening Cool Delights, I was a Massage Therapist, but I had always had a passion for Italian food and in particular desserts.

We decided to open a business that is seasonal and puts a smile on people’s faces, there is nothing better than an excited child and a happy parent on a hot day! The idea came to us upon returning from a trip abroad, we had enjoyed so much amazing gelato and realised that there really wasn’t any available in Sandringham. We purchased the premises and went about creating a business. 

What do you guys serve?

We serve Gelato, Acai Bowls, Pitaya Bowls, RAW treats and Superfood Smoothies.

Tell us about your team at Cool Delights on Bay

Keen, vibrant young adults. Servers are mainly high school or university students and all are casual. This keeps the vibe of the store young and fun, that along with some great music and hopefully some great weather creates the perfect environment for an ice cream. Management and production is done by an acclaimed gelato chef. 

What can customers expect when they visit Cool Delights on Bay?

From a product perspective: Artisan made gelato, both sorbets and dairy along with an array of raw cakes, juices, smoothies and a selection of superfood offerings. From a service perspective, consistent and friendly customer service. Our goal is to always have you smiling when you leave.

What makes Cool Delights on Bay unique?

People appreciate that it’s family run and not part of a franchise. The gelato is small batch and very fresh and we are very enthusiastic about our offerings, everything is made fresh on the premises.

What is your favourite item on the menu?

The Green Smoothies are great, but you can’t go past a nice gelato on a hot summers day! 

What is the most popular item on the menu?

The gelato without a doubt, with the range of flavours we have, there is something for everyone…but a crowd favourite is definitely the Nutella Swirl. 

How are gelato flavours selected each season?

Seasonal flavours and tastes make it a little easier to choose which ingredients we always have on hand. We also keep a close eye on what has been popular the previous season, and keep the crowd pleasers ready for the summer demand.  

What is your favourite thing about the City of Bayside or Sandringham?

It’s like being on holiday. The community are wonderful and friendly and always supporting local business like ours.
